According to Schaefer, by 2030, dark kitchens could create a global value opportunity of 1 trillion USD. This type of business could adapt spaces within shopping malls and apply its "prepare and deliver" model in traditional retail locations and thus occupy some of the 71,000 sqm available for mini or foodcourt venues; or spaces within office assets could be reconverted in major city submarkets, reinventing these spaces and revitalizing the real estate sector according to emerging trends.
